Discover coriander
Also known as Chinese parsley, coriander has a long history in Middle Eastern cooking. Its leaves and seeds offer quite different flavours and are used in many cuisines.
Guacamole with coriander
Ingredients: 2 avocados, about 500 g in total, half a white onion, 35 g lime juice, fresh coriander, 1 tomato and a pinch of salt. Finely chop the onion, coriander and tomato. Mash the avocado, stir in the lime juice, then combine with the remaining ingredients and season to taste.
In the kitchen
Fresh leaves suit soups, fish, vegetables, pulses and meat dishes. The roots are used in Asian cooking, while the seeds can be ground into vegetable dishes, pulses and risotto, or used in liqueurs and baking.
Growing and practical tips
Sow between March and May. Choose sun when growing for seeds and a more sheltered, partially shaded position when growing for leaves. Coriander can tolerate cool conditions.
