Discover bay leaf
A symbol of wisdom and victory in Greek and Roman culture, bay has a firm place in Mediterranean cooking. A few leaves can lend depth to a simple vegetable or pulse dish.
Bay leaf liqueur
Ingredients: 500 ml food-grade 95% alcohol, 600 ml water, 400 g sugar and 25 bay leaves. Steep the leaves in the alcohol for two weeks, then filter. Dissolve the sugar in the water and let the syrup cool completely before mixing it with the infusion. Bottle and leave in a dark place for a further three to four weeks.
In the kitchen
Add bay leaves to beans, potatoes, carrots, onions and courgettes, or to slow-cooked dishes. Remove the firm leaves before serving.
Growing and practical tips
Bay is a hardy plant suited to coastal and hilly areas. It can grow in pots or gardens, including partial shade. Shelter it from strong wind and protect it from severe cold.
