Discover sage
Sage has a long history in Mediterranean tradition. Its name comes from Latin, and the plant also had a ceremonial role in Roman culture. Its distinctive leaves bring a warm, savoury aroma to the kitchen.
Sage and almond sauce
Ingredients: 30 sage leaves, 80 g unpeeled almonds and extra virgin olive oil. Wash and dry the sage. Finely blend it with the almonds, then gently sauté the mixture in olive oil over medium heat for a few minutes.
In the kitchen
Sage is a classic ingredient in saltimbocca, with veal and prosciutto. Try it with butter and ravioli, in pesto-style sauces or on toast.
Growing and practical tips
This evergreen perennial likes sunny, warm conditions and dislikes excessively wet soil. It can tolerate short cold spells.
