Discover tarragon
Tarragon takes its name from its twisting roots. Particularly appreciated in French and Tuscan traditions, it offers an anise-like, slightly peppery fragrance.
Tarragon pesto
Ingredients: 4 sprigs tarragon, 50 g almonds, 10 g pine nuts, 30 g breadcrumbs, 40 g grated cheese and extra virgin olive oil. Blend the herbs with the nuts, breadcrumbs and cheese, adding oil gradually until the mixture reaches the consistency you prefer.
In the kitchen
Tarragon complements seafood, eggs, roast vegetables, rice, meat and soups. It features in tartare sauce, béarnaise and Tuscan herb sauces. Its leaves can also flavour infusions served warm with lemon or chilled with sparkling water.
Growing and practical tips
Use the fragrant leaves with care so their distinctive flavour complements the other ingredients.
